Segovia, city located in the region of Castilla de la Mancha, a magical place where history brings us amazing stories from civilizations like "Romans" and their influence in the development of the city with arquitectural masterpieces like the one demonstrated in the aqueduct that crosses the whole city, as well as the Gothic trend exposed in the architecture of the cathedral.
This cathedral or castle was the main influence for Disney to create Cinderella's castle.
In this wonderful city is where we can find another of it's historic attractions which dates back to ancient times as is the preparation of "Lechoncito or Cochinillo" to firewood.
A historic place managed from generation to generation, Cándido is undoubtedly the world leader in how to cook an excellent suckling pig, so tender and well made that you can cut the whole pig only with the edge of a ceramic plate.
Place is always full no matter the day or time of the week, people making long lines to enter and taste their dishes and waiting the meet or be served by Cándido " The Mesonero Mayor de Castilla".
You can start this gastronomic journey with a beans stew made with pork ear from their own farm, then a portion acorn-fed guijuelo iberico ham or a warm asparagus salad if you want something light.
Let's forget the menu and go straight to what attracts us, the suckling pig.
Perfect elaboration and flavor that melts in your mouth giving you an explosion of incomparable flavor.
You can also try the delicious Lechal lamb or beef steak, both excellent.
As dessert, I highly recommend the Zamorano sheep cheese or the apple pie with cinnamon cream.
